The Atlantic redfish is an iconic bottom-dwelling fish species from the Gulf of St. Lawrence. Chasse-Marée presents it here in delicate fillets, preserved in golden sunflower oil seasoned with the sweet and salty flavor of sea bacon, a seaweed native to our region.
Eating redfish, in addition to being delicious, gives a boost to the northern shrimp population, which is in decline because the redfish is its predator.
