How well do you know the edible mushrooms from our part of the world? Fresh or dried, foraged in the forest or grown in an urban mushroom farm, you will find every Quebec mushroom we carry right here. These are worlds away from the button mushroom in both taste and texture: whether grown or foraged, what you will find here are varieties you never come across in a supermarket.

A wide variety of wild and forest mushrooms

The morel is probably the best known wild edible mushroom, but this world runs far deeper! Our foragers harvest a broad range of forest mushrooms across Quebec and Canada, to be enjoyed fresh in season or dried all year round:

The lobster mushroom, a star of our forests

Recognizable by its bright orange colour, the lobster mushroom owes its name to a briny note reminiscent of seafood. It is one of the most versatile wild mushrooms, available fresh in season or dried year round. To get to know it, see our 10 recipe ideas with chanterelles and lobster mushrooms.

Fresh and locally grown mushrooms

Alongside wild foraging, our growers cultivate exceptional mushrooms in an urban mushroom farm in Montreal: our fresh oyster mushroom mix, with its white and delicate flesh, and organic maitake, in their fan of fronds. In season, we add fresh chanterelles, fresh morels and even truffle.

A spectrum of flavours, from forest floor to sea breeze

From the rich, earthy depth of morels to the fruity, buttery taste of chanterelles, by way of the briny edge of lobster mushrooms, the range of flavours is vast. There is something here for every palate. Forest mushrooms grow in our woods from spring until late fall: Quebec mushrooms are as varied as they are flavourful, a genuine treasure of our forests.

Dried mushrooms: how to rehydrate them

Dried mushrooms keep for a long time and concentrate their aromas. To rehydrate them, soak them for 15 to 20 minutes in hot water (or another hot liquid: broth, wine, and so on), then strain and keep the soaking liquid: it makes a fragrant broth, ideal for risottos and soups. We explain it all in our guide: how to prepare dried wild mushrooms. See our full selection of dried mushrooms as well.

Mushroom recipes worthy of a chef

The umami-packed vegetarian alternative

Looking to replace meat in your meals without giving up on flavour? You are in the right place: mushrooms are bursting with it. They lend their umami depth and meaty texture to your favourite dishes — pulled “pork”, stroganoff, carbonara, tourtière, burgers and more. This gold of our forests is truly the holy grail for vegetarians and vegans.
