This syrup is prepared in a bain-marie over very low heat to allow the fruit to release its juice gently, without rushing it! Wild blueberries, sugar, and spruce shoots cook gently for 3 hours, resulting in a complex and very flavorful syrup with a creamy texture, to which the spruce adds a forest-like touch.
