The magret — the noblest cut of the duck — is slowly dry-cured in the tradition of fine cured meats, developing a melt-in-your-mouth texture and a deep, elegant flavour with hints of hazelnut and mild game.
Thinly sliced, it's best enjoyed as-is to fully appreciate its character, or paired with a firm cheese, spiced pickles and a glass of natural cider. It also shines in the kitchen: wrapped around a seared scallop, layered onto a tarte flambée with crème fraîche and caramelized onions, or draped over a white pizza fresh out of the oven to melt just so.
