Rosé sparkling wine made from purchased grapes: Acadie, Adalmina, Muscat Osceola, Marquette and Radisson. The bubbles are very clean, the effervescence fine and the aromas delicate. At 11.5% alcohol with moderate acidity, the balance is just right for a sparkling wine.
Traditional method secondary fermentation in November, followed by 9 months on lees before disgorgement in September. The 3 g/L of residual sugar, barely noticeable, rounds out the finish.
