Preparation

We particularly like matsutake as a replacement for shiitake in a dashi broth, but they are also great in powder form for making a grilling rub (delicious with grilled meats or vegetables). They come in very handy in Japanese cuisine.
To rehydrate matsutake mushrooms, immerse them in a very hot liquid (broth, cream, wine, beer, water) until they regain a tender texture - 15 to 20 minutes should be enough. Then remove them and add them to your recipe. Keep the rehydration liquid to concoct homemade sauces or broths that will be bursting with flavor!

Flavor Pairings

Matsutake mushrooms are really delicious when combined with leeks, asparagus, bok choy, rice, miso, shallots, thyme, and chives.
