In this wild mushroom and boreal spice rub, the intense flavors of mushrooms combine with spices and the fruity liveliness of sea buckthorn to reveal your food in a new light.
This spice rub is handcrafted from chanterelles and morels, along with local boreal spices: our house-smoked dune pepper and aromatic sweetfern leaves. We use mushrooms whose flavors are concentrated through the dehydration process to create a true umami flavor bomb that will enhance your meats, poultry, vegetables, and even your tofu.
We make our rub with upcycled ingredients to reduce waste. Dehydrated mushrooms that don't pass our aesthetic quality control to be sold as is, rather than being composted or thrown away, are ground into powder and used in this rub. Just because they're less beautiful doesn't mean they're less tasty! Sea buckthorn pulp, which is left over after sea buckthorn juice is made, is also upcycled in this rub, lending its fruity aromas and brightness.
