Frozen Saskatoon berries can be enjoyed all year round while the Saskatoon berry season is relatively short. They are normally picked in July, in the middle of summer. Saskatoon berries (also called serviceberries, prairie berries, juneberries, or shadbush) are round berries of a beautiful purple color. Their sweet taste is similar to that of blueberries, but Saskatoon berries have a slightly thicker skin and very small seeds. Some people say that their taste is reminiscent of almonds or pears.

Saskatoon berries grow across Canada, and they have been widely consumed, particularly by indigenous peoples. They're one of the ingredients for the pemmican recipe, a dish made with meat, fat, and dried fruit. The English name of the bay, Saskatoon Berry, comes from its Cree name.

Flavor Pairings

In addition to their natural ability to pair with other berries, Saskatoon berries go very well with almonds, sweetfern catkins, lavender, lemon, mint, and balsamic vinegar.

Preparation

As they contain more pectin and less water than blueberries, they are perfect candidates for jams and pie fillings with a nice consistency. We also recommend pairing them with other tart berries like haskap or raspberry for a complex and balanced flavor profile. Saskatoon berries are also delicious in sauces that accompany meats, or as a chutney. And, of course, they can also be added to all your pastries. Saskatoon muffins, turnovers, scones, and biscuits are sure to delight everyone's taste buds.

Conservation

When placed in the freezer without thawing, they will last for a long time. However, we recommend making a delicious meal out of them within 12 months of purchase to enjoy their full flavor.

Origin

Product of Québec

Ingredients

  • Frozen saskatoon berries. Because of the minimal amount of cyanide contained in the fruit's tiny seeds, eating very large quantities of fresh Saskatoon berries can cause stomach aches and diarrhea. However, it can be eliminated by cooking the fruits, which can then be consumed in larger quantities without problem.

We are transforming local culinary culture

to put the North on the plate

The North,

It is the land here that nourishes us, from the forests to the fields to the Saint-Laurent. It is our connection to the cycle of the seasons.

It is a community of farmers, fishermen and artisans who put their know-how at the service of our food and our gourmet pleasures.

In return, we highlight the fruit of their work through the exceptional condiments that we create and our selection of local products, in a spirit of short supply chain and respect for the environment.
