Looking to offer a vegan option to your guests during the holiday season? These marinated mushroom crostini are the perfect bite to add a local and refined touch to your appetizers.
They showcase our mushrooms marinated with boreal spices and garlic: these elegant Canadian-grown oyster mushrooms are sautéed, then infused with sweet fern and sweet gale leaves, before being dipped in golden oil flavored with garlic and dune pepper. The result: a melting texture, a delicate acidity, and a herbaceous profile that evokes the flavors of the boreal terroir.

Ingredients
- 1 jar of marinated mushrooms, Boreal Roots
- 1 jar of black garlic jelly The Earth of the 9
- 1 jar of Baba Hummus's artisanal garlic hummus Babaioli*
- 1 tbsp. Les Truffettes Appalachian Truffle Flavored Oil
- 1 baguette
- 1 sprig of fresh rosemary
- Vegetable oil, to taste
- Sea salt, to taste
Hummus is a great option to replace the cheese usually spread on crostini. For another vegan alternative, you can use Finfinoix's cashew nut spread with garlic and chives, or Ferment's vegan foie gras.

Preparation
- Preheat the oven to 350°F (175°C). Slice the baguette into pieces about 1/2 inch thick. Depending on the length of the baguette, you should get about 24 pieces. Place the slices on a baking sheet, then drizzle lightly with a little vegetable oil of your choice and add a pinch of fleur de sel. Bake for about 8 minutes; the goal is not to make croutons, but simply to lightly toast the bread so it remains soft inside. Once out of the oven, let cool for a few minutes before topping.
- Spread each crostini with about 1 tsp of hummus. Then add ½ tsp of black garlic jelly. Place 1 to 2 marinated mushrooms on each crostini, depending on their size.
- Place the crostini on a serving plate. Finely chop the needles from a sprig of fresh rosemary and sprinkle them over the crostini. For an even more festive touch, add a drizzle of truffle-flavored oil (1 to 2 drops per crostini is enough for a burst of flavor).
