Lavender is a plant with small purple flowers that has long been celebrated for its divine scent (the Romans already used it to perfume their baths). It is picked just before the flowers open, from late July to late August, when it is at its most aromatic. Because of its scent, it is best known for its use in perfumery and body products. But did you know that the flowers can also be cooked? Not only can their violet hue add color to your dishes, but they'll also perfume them deliciously, adding a subtle floral flavor.

Lavender is excellent in so many recipes! It can be added to infusion mixes, icing, hot chocolate, sorbet, jam, granola, caramel, etc. We particularly like to crush the flowers with a mortar and pestle to release their aromas and use them in a recipe for shortbread cookies, scones, or cakes. The flowers can be used in a delicious cocktail or lemonade syrup. Another option: they can be infused in milk. It can then be used as a base for flan, rice pudding, or fragrant panna cotta. Its flavor blends particularly well with those of apricot, peach, or pear.
If you are even more adventurous, you can try it in a savory dish and make a vinaigrette or marinade. Warning: lavender's fragrance is quite powerful in both savory and sweet dishes. It's best to start with a small amount and increase the dose to taste!
