White sweet clover (melilotus albus) is a honey plant that's very common in Québec. Its tiny white flowers grow in elongated clusters. Its flowers are highly aromatic and become even more so as they dry. 

The taste and aroma of sweet clover are often compared to vanilla (it's sometimes called "boreal vanilla" or "northern vanilla"), due to its sweet, vanilla-like notes, reminiscent of almonds and tonka beans. Its characteristic scent is due in part to coumarin, an aromatic organic substance responsible for the fragrance of fresh hay (also found in tonka bean, sweetgrass, and many other plants).

Whole sweet clover flowers and stems can be infused in milk or cream to create whipped cream or flavored rice pudding. Flowering tops are also a wonderful decoration to add as a finishing touch. Another way to use dried sweet clover is powdered. This can be done using a spice grinder or a mortar and pestle. The powder can then be added to the dry ingredients of your next cake, muffin or scone mix, etc.

Sweet clover flowers can also be used to make sweet clover essence, which adds flavor and aroma to desserts, pastries, and confectionery. The flowers are then removed from the stems and macerated in 94% aIcohoI for several weeks. The mixture is then filtered and used just like a traditional vanilla extract. You can also create a spirit (rum, bourbon, whisky, etc.) infused with sweet clover using the same technique and your favorite bottle. The result - delicious cocktails!
