These whelks, also known as bourgots, are candied in camelina oil, a high-quality oil prized for its vegetal and nutty notes. The whole thing is seasoned with wild caraway, a spice from our local flora that features notes of cumin. These sweet and warm flavors, combined with those of the whelks slowly candied in the infused oil, create a delicious and soft product.
