Dune pepper is the most iconic boreal spice in Nordic cuisine — the one that opens the door and becomes impossible to live without. It’s not botanically a pepper: it’s the catkin of the speckled alder, a small native shrub from Quebec, hand-harvested in the wild. Its menthol, resinous, and citrus notes are softer and more complex than black pepper.

It works just as well in desserts — a berry coulis, a ganache, a shortcake — as in savoury dishes, in a brown butter sauce or a risotto.

It works in desserts and savory dishes! It is therefore delicious with strawberries and cream. It can also go wonderfully with Jerusalem artichokes, olives and in combination with bay leaf.

Preparation

It can be used anywhere traditional black pepper has a place. However, its mildness and complex aromas mean that it will enhance your wild meats and marinades as well as a strawberry and rhubarb compote. Add it whole to your stews and remove it when serving to preserve all its aromas without any bitterness. Or, grate it with a microplane. You can also grind it in a mortar, but avoid passing it through a pepper hand grinder, as its resin could damage the mechanism. These last two methods tend to release more bitterness than the first. Adding it at the beginning of cooking will also result in more bitterness than towards the end of cooking.

To preserve dune pepper, we recommend storing it in a cool, dry place, away from light. As it is a dried and whole spice, dune pepper can be stored almost indefinitely. However, we recommend consuming it within 12 months of purchase in order to enjoy its most intense flavors.
