This syrup is prepared in a bain-marie over very low heat to allow the fruit to release its juices gently, without overpowering it! Here, the strawberries, sugar, and wintergreen are gently cooked for 3 hours, giving the syrup a creamy texture and complex flavors. The wintergreen is mainly used to add freshness and balance the syrup's sweetness, with a subtle flavor.
