Sweetfern is a hardy plant that grows as a small shrub. Its dark green, elongated, serrated foliage can resemble that of a fern, earning it the nickname "sweet fern". The shrub itself gives off a pleasant scent of lemon and eucalyptus, with a balsamic undertone. 

Its dried leaves have aromas of thyme, eucalyptus and even a hint of sweetness (which perhaps explains its English name of "sweet fern"). We like to compare it to thyme and bay leaf for its aromatic and flavor profile. 

It is known in traditional native medicine for its decongestant and pain-relieving properties.

Sweetfern leaves go wonderfully with ginger, fish, seafood, mushrooms, butter and garlic.

Preparation

Dried sweetfern leaves can be added to stews and braises, chicken or pork dishes, and fatty fish such as trout or salmon. Like bay leaf, it works very well with other spices. We suggest using it in combination with dune pepper to flavor the cream used in mashed potatoes or Jerusalem artichokes. It also lends itself particularly well to pairing with ginger, for example in a vinaigrette. You can also drink it as an infusion, hot or cold - it has a resinous, fruity, and slightly tannic taste.
