Black walnuts are one of many northern nut varieties, that grow in cold climates like ours. Still very little known, they are nevertheless extremely tasty and are harvested here, unlike the exotic nuts that we are used to seeing in the grocery store.

However, a pitfall stands between greedy humans and the black walnut: its impressively hard shell, which cannot be opened by hand and requires equipment to break it (ideally, a vise). This very thick shell, however, has a significant advantage taste-wise, because it prevents the nut from developing bitterness.

Black walnut has a completely unique taste, spicy, fruity and woody. Its taste is reminiscent of apple or cider, but some also say that it evokes blue cheese. However, don't worry if you are not a fan of this cheese. Most blue detractors love these nuts because the similarity is not so pronounced, and their flavor palette is more complex.
