White sweet clover (melilotus albus) is an extremely common honey plant. Its tiny white flowers grow in elongated clusters. They are very aromatic on the plant and become even more so as they dry. 

Sweet clover's taste and aroma are often compared to vanilla (it's often called "northern vanilla" or "boreal vanilla") because of its sweet vanilla notes, reminiscent of tonka beans and almonds. Its characteristic scent is due in particular to coumarin, the aromatic organic substance responsible for the fresh hay fragrance also found in tonka bean, sweetgrass, and many other plants.

Preparation

In powder form, sweet clover is at its easiest to cook with. Just add it to the dry ingredients of your next cake, muffin, or scone mix, etc. All baked goods and desserts are great opportunities to add a little sweet clover to your cooking! You can start by replacing 1 tsp vanilla with 1 tsp sweet clover powder and then adjust according to your personal preferences.
Sweet clover can also be sprinkled lightly over your desserts, adding aroma, texture, and wonderful visual presentation.
Sweet clover is absolutely delicious infused (in milk or cream, or your favorite bottle of 40% alcohol), but whole flowers and stems are better suited for this purpose.

Sweet clover is an excellent complement to milk and cream, chocolate, fruit (bananas, peaches, pears, saskatoons, blueberries, camerberries), cinnamon, coffee, nuts and honey.

Bonjour, j'ai acheté du mélilot et il goûte amer, est-ce normal et aucun goût de vanille ?? Je ne connais pas son goût réel car c'est la première fois que je le commande et il ne semble pas moisi ?? Merci de votre réponse :)

Merci de nous avoir écrit! Tout dépend de comment vous avez utilisé votre mélilot. L'avez-vous employé dans une recette? Laquelle? En quelle quantité? Le mélilot a un goût puissant et généralement on peut remplacer la vanille par la même quantité de mélilot dans un gâteau ou une autre pâtisserie, souvent 1 c. à thé. Plus que ça, toutefois, et vous risquez de trop goûter le mélilot.

Évidemment, comme il ne s'agit pas de vanille, donc le goût est un peu différent, même si on peut retrouver une certaine parenté dans le parfum.

Dans tous les cas, laissez-nous savoir comment vous l'avez utilisé et il nous fera plaisir de vous guider pour que vos prochains essais soient 100% réussis! :-)

Je l’ai fait infusé ds vodka, et après 1 mois d’attente, elle remplace parfaitement et même mieux la vanille.
