Preparation

These versatile mushrooms can be used in a variety of dishes: sauces, pastas, risottos, omelets, and more.

To rehydrate chanterelles, immerse them in a very hot liquid (broth, cream, wine, beer, water) until they obtain a tender texture - 15 to 20 minutes should be enough. Then remove them and add them to your recipe. Keep the rehydration liquid to concoct homemade sauces or broths that will be bursting with flavor!

Flavor Pairings

Dehydrated chanterelles go wonderfully well with butter, corn, cream, eggs, garlic and black garlic, lemon, onions and shallots, squash, rice, parsley, thyme, and pepper.

Conservation

Like all dehydrated mushrooms, chanterelles last for a very long time if protected from light and humidity. We still recommend consuming them as soon as possible, within 12 months of purchase, to benefit from their full potential.

We are transforming local culinary culture

to put North back on the plate

The North,

It is the land here that nourishes us, from the forests to the fields to the Saint-Lawrence. It is our connection to the cycle of the seasons.

It is a community of farmers, fishermen and artisans who put their know-how at the service of our food and our gourmet pleasures.

In return, we highlight the fruit of their work through the exceptional condiments that we create and our selection of local products, in a spirit of short supply chain and respect for the environment
