Dune pepper

$10.99

Dune pepper (green alder catkins), also called alder pepper, is a true staple of Northern cuisine.

Much milder than black pepper, it also stands out in another way. Indeed, it has a sweet hint that allows it to express itself equally well in savory dishes and desserts. It also has a resinous, minty and even fruity aspect, reminiscent of citrus fruits.

Although its shape resembles that of long pepper and its aromas can recall black pepper, it is not a pepper in the botanical sense. It is the catkin (male flower) of a small shrub, which is picked by hand in autumn and winter. It can be eaten fresh or dried (such as here).

Preparation

It can be used anywhere traditional black pepper has a place. However, its mildness and complex aromas mean that it will enhance your wild meats and marinades as well as a strawberry and rhubarb compote. Add it whole to your stews and remove it when serving to preserve all its aromas without any bitterness. Or, grate it with a microplane. You can also grind it in a mortar, but avoid passing it through a pepper hand grinder, as its resin could damage the mechanism. These last two methods tend to release more bitterness than the first. Adding it at the beginning of cooking will also result in more bitterness than towards the end of cooking.

Flavor Pairings

It works in desserts and savory dishes! It is therefore delicious with strawberries and cream. It can also go wonderfully with Jerusalem artichokes, olives and in combination with bay leaf.

Conservation

To preserve dune pepper, we recommend storing it in a cool, dry place, away from light. As it is a dried and whole spice, dune pepper can be stored almost indefinitely. However, we recommend consuming it within 12 months of purchase in order to enjoy its most intense flavors.

Even better than pepper...

My wife and I just used your dune pepper in homemade chicken broth; we made a pot with pepper, and another with dune pepper, to compare - well, there's no comparison! My wife and I like the one with dune pepper much better, it has a more complex and intense aroma. Thank you very much for this discovery!

Thank you very much Guillaume for this wonderful testimony! It's really a pleasure to have been able to introduce you to this very versatile aromatic!

Great discovery

A great discovery! Very interesting to add character to your desserts. I put dune pepper in a haskap coulis and it was delicious.

Thanks for the kind words! It's nice to have contributed to this discovery! :)

We are transforming local culinary culture

to put North back on the plate

The North,

It is the land here that nourishes us, from the forests to the fields to the Saint-Lawrence. It is our connection to the cycle of the seasons.

It is a community of farmers, fishermen and artisans who put their know-how at the service of our food and our gourmet pleasures.

In return, we highlight the fruit of their work through the exceptional condiments that we create and our selection of local products, in a spirit of short supply chain and respect for the environment
