Dune pepper (the catkin - the male flower - of the green alder), also called alder pepper, is one of the most popular boreal spices.

Smoked with cherry wood, this dune pepper combines its resinous and minty aspect with woody aromas. It also gives off fruity and smoky notes clearly reminiscent of mezcal. It will enrich and complexify the flavors of your dishes.

Although its shape resembles that of long pepper and its aromas can recall black pepper, it is not a pepper in the botanical sense. It is the catkin (male flower in the shape of an ear) of a small shrub, which is picked by hand in autumn and winter. It can be eaten fresh or dried (as here).

Preparation

It can be used anywhere you want to infuse smoky, peppery, and resinous flavors: in chili or sauce, on grilled or roasted meats and vegetables, in a homemade spice blend. Add it whole to stews and remove it when serving to preserve all its flavors without the bitterness. Or grate it instead with a microplane. You can also grind it in a mortar, but avoid putting it in a pepper mill, as its resin can damage the mechanism. Both grinding and grating methods tend to produce more bitterness than the former. Adding it early in the cooking process will also result in more bitterness than adding it late in the cooking process.

Flavor Pairings

With its smoky aspect, this dune pepper pairs perfectly with salmon and trout, as well as your favorite meats: chicken, pork, beef, and more! On the vegetable side, it will be interesting with eggplants and peppers as well as grilled or roasted root vegetables.

In order to preserve its aromas and flavors, we recommend storing smoked dune pepper away from light, in a cool, dry place. As it is a dried and whole spice, smoked dune pepper can be stored almost indefinitely. However, we recommend consuming it within 12 months of purchase in order to enjoy its most intense flavors and smoky aroma.
