Wild mushrooms open up a world of incomparable flavour for anyone willing to discover them. If you've ever tasted a wild mushroom, you know it's worlds apart from button mushrooms in both taste and texture. The forest is a long way from the grocery store. If you think you don't like mushrooms, have you ever tried a forest mushroom? More than one person has changed their mind after tasting well-cooked fresh chanterelles.

A wide variety of forest mushrooms from Quebec and Canada

The morel is probably the best-known edible wild mushroom, but this world is vast! Our foragers harvest a wide range of forest mushrooms across Quebec and Canada, which you can enjoy fresh in season or dried year-round:

A range of flavours, from foresty to briny

From the rich, earthy, foresty character of morels to the fruity, buttery taste of chanterelles, all the way to the briny note of lobster (crab) mushrooms, the range of flavours is vast. There's something for every palate. Forest mushrooms grow in our forests from spring until late fall: Quebec mushrooms are as diverse as they are flavourful, a true treasure of our forests.

How to rehydrate and cook dried wild mushrooms

Dried forest mushrooms keep for a long time and concentrate their aromas. To rehydrate them, soak them for 15 to 20 minutes in hot water (or any hot liquid: broth, wine, etc.), then strain and keep the soaking liquid: it makes a fragrant broth, perfect for your risottos and soups. We explain it all in our guide: how to prepare dried wild mushrooms. You can also turn them into a homemade wild mushroom broth, the ideal base for your fall dishes.
