Sweetfern catkins are a boreal spice with captivating aromas. They are the male flower sweetfern, which is often found in wild blueberry fields. It is best known for its flavors which wonderfully enhance several desserts, but also many savory dishes. The aromas of sweetfern catkins are very complex. There are notes of cinnamon, nutmeg and clove, as well as a scent of resin and bay leaf, echoing the aromas of sweetfern leaves.

Preparation

Use the catkins in your recipes and save the branches to add to your homemade broths or syrups. Dry roast the catkins after detaching them from the branches to awaken their aromas and flavors! We recommend sweetfern catkins in your sauces, syrups and stews, but also as a finishing touch, sprinkled on your favorite desserts. If you use it with characterful foods (lemon, cocoa, raspberry, for example), remember to increase the dosage.

Sweetfern catkins are delicious when enjoyed with apples, bananas, blueberries, chocolate or cocoa, coffee, ginger, maple syrup, honey, oats, citrus fruits or pears. It is also excellent in combination with rice, sweet potatoes, pecans and almonds.

Le goût rappel le clou de girofle et la muscade. Je l'ai utilisé dans la confection d'une crème glacée et c'était vraiment excellent. J'ai hâte de tester en macération et infusion. Une belle découverte à faire connaître.
