Juniper berries are first and foremost known for the role they play in gin, a role so important that the spirit took its name from these bitter, sweet, and tart berries. The word "gin" comes from the French word "genièvre", modified to genever in Dutch, then shortened to gin in English.
Flavoring alcohol is, however, far from the only possible avenue for these small aromatic berries. Their astringent aspect combined with the lemony, resinous, and peppery notes lend themselves perfectly to a ton of uses.
Unlike European juniper berries, those found in Québec are fruitier, with notes of warm wood and more traditional resinous scents. Unlike many spices, you can even bite into a whole berry without wincing - they're actually rather tasty!
