This chocolate bar was created in collaboration with Chocolat Dicitte, Montréal-based makers of creative and delicious bean-to-bar chocolate. Chocolat Dicitte's artisans drew inspiration from our Northern ingredients to create this exceptional chocolate bar scented with balsam fir and wild rose.
The cocoa beans that this bar is made of are grown by 156 small farmers in the Piura region of north-western Peru. They are members of an association that enables them to increase their profits and benefit from collective infrastructures for fermenting and drying the beans. The association is also involved in community projects such as reforestation and water purification. Piura is home to a rare white porcelana cocoa. Its unique and rich character is due both to its criollo genetics and to the climate and biodiversity of the region's terroir.
Balsam fir lends this chocolate bar its resinous, citrus notes, while rose, with its floral aspect, is reminiscent of cranberry. Combined with Piura chocolate, the result is a creamy bar with comforting, intriguing, and invigorating flavors!
