These mushrooms are not shaped like lobsters or crabs. Instead, they owe their name to their reddish-orange color, reminiscent of crustaceans after cooking. They owe this color to a funny phenomenon - lobster mushrooms are in fact russula parasitized by hypomyce lactifluorum. It is this parasitism that gives them their color and edible quality. It's the perfect way to add colour and flavor to your gourmet dishes! 

Lobster mushrooms have a sweet-salty, woody taste, reminiscent of matsutake and seafood, as well as a firm texture.

Delicious in risotto, with fresh pasta, salads, fish, and in a bisque - vegetarian or not!

To rehydrate lobster mushrooms, immerse them in a very hot liquid (broth, cream, wine, beer, water) until they obtain a tender texture - 15 to 20 minutes should be enough. Then remove them and add them to your recipe. Keep the rehydration liquid to concoct homemade sauces or broths that will be bursting with flavor! Lobster mushrooms can also be ground into powder and used as a seasoning - delicious on fish or tofu!
