Dehydrated porcini mushrooms

$10.99

Porcini mushrooms are part of the same family of wild mushrooms as boletes. Being among the most delicate in the family, they are also the most sought-after. Their name, "porcini", is of Italian origin. They are just as tasty as their cousins of the same family, and their meaty-textured cap is rich and satisfying. Their hazelnut taste is woody and delicate, with an earthy, almost sweet undertone.

Preparation

Porcini are very versatile mushrooms. They can be added to sauces, pasta dishes, or a mushroom risotto.

To rehydrate porcini mushrooms, immerse them in a very hot liquid (broth, cream, wine, beer, water) until they obtain a tender texture - 15 to 20 minutes should be enough. Then remove them and add them to your recipe. Keep the rehydration liquid to concoct homemade sauces or broths that will be bursting with flavor! Dehydrated porcini can also be ground into a powder and used as a tasty, umami seasoning on vegetables, tofu, or meat.

Flavor Pairings

Porcini mushrooms go naturally with butter, garlic and onion, lemon, cream, cheese, eggs, polenta and herbs like parsley and basil.

We are transforming local culinary culture

to put North back on the plate

The North,

It is the land here that nourishes us, from the forests to the fields to the Saint-Lawrence. It is our connection to the cycle of the seasons.

It is a community of farmers, fishermen and artisans who put their know-how at the service of our food and our gourmet pleasures.

In return, we highlight the fruit of their work through the exceptional condiments that we create and our selection of local products, in a spirit of short supply chain and respect for the environment
