Maitake mushrooms (grifola frondosa) are truly unique. Resembling a sort of curly ball at first glance, their cap is made up of components that resemble wavy petals. In Japanese, "maitake" means "dancing mushroom", which describes their appearance very well. Their exterior color ranges from pale-brown to dark-brown to pale-gray, while the inside of the flesh is pale. 

Their pleasant flavor and aroma are reminiscent of hazelnuts, with a hint of acidity. The taste of maitakes also has the delicately earthy undertone typical of mushrooms. Their texture is quite firm, and their wavy appearance adds considerable appeal, as the seasoning is evenly distributed between the "petals" of the mushroom.

Flavor Pairings

Maitakes reveal themselves when combined with the flavors of French shallot, garlic, butter, thyme, rice and dashi broth.

Preparation

You may clean these mushrooms with water and a soft-bristled toothbrush (new, of course!) to remove any debris. Just make sure to pat them dry.

A bit like lion's mane mushrooms, maitakes can be frayed by hand. They will then break up into more or less conical pieces. You can then pan-fry them with a little butter and garlic. You can also slice the whole mushroom to make "steaks", which can be pan-fried or roasted in the oven. Of course, maitake is also a prime candidate for any recipe where you are already using mushrooms, from pasta dishes to cream of mushroom soup. It will definitely bring its unique texture and nutty taste to any recipe. Please note: maitakes must be cooked before eating.

Conservation

Fresh maitakes can be stored in the refrigerator, in a paper bag or cardboard box to control the humidity level.
