Wild blueberries are small, well-known and widely appreciated local fruits. Their characteristic blue color is given to them by a high content of flavonoids, especially anthocyanins, antioxidant compounds. The wild variety (vaccinium angustifolium) is said to contain more of them than the cultivated variety (vaccinium corymbosum, or highbush blueberry).

The consumption of wild blueberries dates back to well before colonization: indigenous peoples used them as a seasoning. Let us also remember that the creation of large highbush blueberry orchards only dates back to the 1960s. Before that, the wild blueberry was king!

The wild variety comes from dwarf shrubs, much smaller than those of the highbush variety, which can reach up to 8 feet. These dwarf shrubs produce smaller fruits, and in smaller quantities, which explains the greater rarity and the higher price of wild blueberries. On the other hand, their flavor is known to be more pronounced than that of the cultivated fruit. This is why they are particularly sought after. Harvested between the end of July and the beginning of September, they should be enjoyed when they are available.

Wild blueberries pair well with the flavors of bananas, cream, cinnamon, ginger, honey, lavender, lemon, maple syrup, nutmeg and mint.

Preparation

Enjoy wild blueberries as they are! Fresh, they are bursting with flavor. Here are some ideas for eating them fresh: in fruit salad, on a pavlova or simply topped with cream and maple syrup (or wildflower honey). You can also cook them: they are delicious in a coulis, a jam, in a pie or cake, in scones or cookies, as a topping for a panna cotta, and in a multitude of other desserts. On the savory side, they can also be made into excellent sauces or jellies to accompany game meats, vinaigrettes and marinades.

Conservation

Store your wild blueberries in the refrigerator, with paper towels to absorb moisture and in a container that allows air to circulate. To keep them fresher longer, avoid washing them before refrigerating, and only wash the portion you are about to eat.
