Dehydrated morels

 

The ultimate forest mushroom, the morel is among the most sought-after forest products. It gives a powerful umami taste to your dishes and reveals a woody aspect and a nutty flavour.

 

Dehydrated, it is used to add flavor to your dishes with sauces, terrines or pastas.

 

To rehydrate morels, simply immerse them in a hot liquid (broth, cream, wine, beer, water) until they are tender. Then add morels to your recipe and cook with their rehydration liquid, which is bursting with flavor!

To use dune pepper, several methods are available to you:

  • add it whole to a dish with sauce, then remove it before serving (like a bay leaf);
  • grind it in a mortar and add it at the end of cooking;
  • grate it with a microplane for a similar effect.
