This granita is everything you want during the really hot spells of summer. It explodes with the fruity flavor of raspberry, the scent of wild rose and the freshness of mint. Did we say it's a frozen dessert?

 

Does it make you hungry? This very easy to prepare granita can be ready in just 5 hours. It's perfect to serve after a nice meal in the summer, as it's both bursting with flavor and very refreshing.

 

 

Ingredients

 

  • 1 cup of water
  • 2/3 cup white sugar
  • 3.5 g wild rose petals , plus a few petals for decoration
  • 3 cups fresh raspberries, plus a few raspberries for decoration
  • 1 tbsp freshly squeezed lemon juice
  • about twenty finely chopped mint leaves, plus a few whole leaves for decoration

Preparation

 

  1. Combine water, sugar and rose petals in a small saucepan. Heat over medium heat until the sugar dissolves. Bring to a boil, then remove from heat and leave to cool for ten minutes.
  2. In a bowl, place the fresh raspberries and lemon juice. Blend with a hand mixer until a smooth consistency is obtained.
  3. Add the syrup to the raspberry mixture, then blend again with a hand blender until smooth. Add the chopped mint leaves and let cool completely.
  4. Through a fine sieve, pour the mixture into a shallow Pyrex dish. Using a spoon, press down on the mixture until all the liquid has been poured into the dish and only the solids remain in the strainer.
  5. Place in the freezer with plastic wrap or a lid. During the first two hours, mix every 30 minutes using a fork.
  6. Then let freeze without mixing for 3 hours or more.
  7. When ready to serve, scrape the surface of the granita with a fork to remove crystals. Place the crystals in a bowl and serve with mint leaves, fresh raspberries and rose petals as decoration.
