They owe this color to a funny phenomenon - lobster mushrooms are in fact russula parasitized by hypomyce lactifluorum. It is this parasitism that gives them their color and edible quality. It's the perfect way to add color and flavor to your gourmet dishes! Lobster mushrooms have a woody, nutty taste, reminiscent of matsutake, and a firm texture. They are also commonly known as crab mushrooms, or lobster mushrooms.
