Lion's mane mushrooms go well with butter, onions and shallots as well as garlic, and aromatic herbs such as parsley or tarragon.

Preparation

This mushroom shreds very well, which adds an interesting texture to your dishes. It can also be sliced into "steaks" before pan-frying.

It is usually cooked in a pan with a little butter or oil as well as garlic, shallots or onions, until it gets a nice golden color. It can also be fried.

Lion's mane can accompany several types of dishes, and even replace meats (in a vegetarian pulled pork, for example)!

Conservation

Store your lion's manes for a few days in the refrigerator, in their original packaging or in a paper bag to regulate the humidity around the mushroom. Eat it sooner rather than later, as it tends to develop a bit of bitterness when you delay eating it.
