Kombu, also known as kelp, has a salty taste due to its high iodine content. Unlike most seaweeds, however, it also has a slightly sweet taste. Overall, its flavor is reminiscent of dried hay, caramel, and fleur de sel.

Kombu is one of the basic ingredients of dashi, a traditional Japanese broth. You're probably familiar with dashi, since it's the base for miso soups. Seaweed can also be used to enhance the flavors of sauces and broths, as well as marinades. After rehydrating for fifteen minutes in cold or lukewarm water, it can be used in fish and seafood dishes, poké bowls, soups, and salads.
This seaweed also has gel-forming properties, so it can be used to add creaminess. In this sense, it can replace cornstarch, for example. To keep kombu for gelling your preparations, just keep it from boiling.
It can also speed up the cooking of cereals and legumes, making them easier to digest. What can't it do?

Kombu pairs naturally well with sea foods as well as red grilled meat, tofu, root vegetables, mushrooms, noodles, ginger, miso, mirin and soy sauce.

Dried kombu should be stored in a cool, dry place, away from light. Your pantry cabinet should do the trick! When dried, it has a long shelf life. We still recommend consuming it within a year of purchase for maximum freshness.
