Québec's staghorn sumac is a spice, but also the name of the plant from which it is obtained (rhus typhina). You have probably already come across this native tree many times: it is present in many regions of Québec. It lines highways and slips into open and rocky places, which it likes. You may have recognized it by its fern-like leaves that turn a bright red color in the fall or by its downy, conical red fruits.
It's the staghorn sumac's fruits that can be eaten, ground or infused. Their fruity, vinegary and very acidic taste is characteristic. It is similar to that of Middle Eastern sumac (of the rhus coriaria variety), used in particular in zaatar and in Fattouche salad. Unlike that of Middle Eastern cuisine, which is often cultivated, our Québec staghorn sumac is picked in the wild.
