Québec's staghorn sumac is a spice, but also the name of the plant from which it is obtained (rhus typhina). You have probably already come across this native tree many times: it is present in many regions of Québec. It lines highways and slips into open and rocky places, which it likes. You may have recognized it by its fern-like leaves that turn a bright red color in the fall or by its downy, conical red fruits.

It's the staghorn sumac's fruits that can be eaten, ground or infused. Their fruity, vinegary and very acidic taste is characteristic. It is similar to that of Middle Eastern sumac (of the rhus coriaria variety), used in particular in zaatar and in Fattouche salad. Unlike that of Middle Eastern cuisine, which is often cultivated, our Québec staghorn sumac is picked in the wild.

Preparation

To use Québec's staghorn sumac, sprinkle it on salads or as a finishing touch to dips, grilled meats and vegetables, as well as dishes where you want to add acidity. It is particularly excellent with fish and lamb. It can also be infused to create a marinade, cocktail syrup or lemonade. To obtain an infusion that extracts the maximum acidity, simply add the sumac to water and simmer for 30 to 40 minutes. Be careful not to boil, which would release the tannic acid and bitterness of the sumac. Once the liquid is nice and pink and tangy, filter it and use it in a recipe. The tangy liquid can even be used as is to acidify cocktails. This allows you to replace traditional lemon juice with a 100% local ingredient. Québec staghorn sumac can be used in all recipes that call for middle eastern sumac.

Sumac is delicious for seasoning chickpeas and legumes, cucumbers, onions, parsley, rice, thyme, tomatoes and yogurt.
