Fresh fiddleheads
Fiddleheads are the young shoots of the ostrich fern, still curled up on themselves. It is this very particular (and let's face it, magnificent!) shape that gave them their name. Later in the season, the shoots unfurl and are no longer edible. This is why the fiddlehead season is very short.
In taste, fiddleheads are similar to asparagus, with some hints of artichokes or green beans, and have a firm texture when properly prepared. They should not be eaten raw.
