Fiddleheads are the young shoots of the ostrich fern, still curled up on themselves. It is this very particular (and let's face it, magnificent!) shape that gave them their name. Later in the season, the shoots unfurl and are no longer edible. This is why the fiddlehead season is very short.

In taste, fiddleheads are similar to asparagus, with some hints of artichokes or green beans, and have a firm texture when properly prepared. They should not be eaten raw.

Flavor Pairings

Fiddleheads are delicious with butter or brown butter, with goat cheese or parmesan. They can be used in egg dishes such as quiches. We also recommend cooking them with garlic, lemon or mustard, and serving them with mushrooms or potatoes.

Preparation

Fiddleheads should never be eaten raw, otherwise you risk food poisoning. They should be prepared properly by removing all the brown scales with your fingers and rinsing them well. Then, it is recommended to blanch them or boil them in salted water for a maximum of 5 minutes. The cooking water should not be reused. (Health Canada recommends 15 minutes of cooking. However, chefs generally agree that this is way too long, and that it results in a soft and mushy vegetable. We agree with the chefs.) You can finish cooking them by pan-frying, deep frying or baking them, for example. Fiddleheads are very suitable for pasta dishes, risottos, quiches and potato salads. They are also perfect as a simple side vegetable.

Conservation

Fiddleheads should be kept in the refrigerator and eaten quickly. They usually last for 2 days in the fridge. You can extend their shelf life a bit by placing them in a container of fresh water that you change every day. But honestly, the season is so short: why not enjoy them at their freshest and eat them immediately?
