These pink bubbles are composed of 33% Acadie, 29% Marquette, 15% Adalmiina, 12% Vidal and 11% other grape varieties (Muscat, Ste-Cliche and Frontenac Blanc).
Vinification: 24 to 72 hours of maceration on the skins for Acadie, Adalmiina and Vidal to extract aromatics and naturally reduce acidity, direct pressing for the other grape varieties. Fermentation in stainless steel. Second fermentation in December using the Champagne method and disgorging in March. All without dosage, therefore brut nature.
The bubble is fine, with aromas of wild berries, and low acidity.
