Oyster mushrooms, fried chicken style

If you want to make a change from traditional pan-fried mushrooms, we invite you to try this vegan recipe which can very well replace fried chicken, especially when you make it with oyster mushrooms with a very firm texture, such as king oyster mushrooms or lion's mane mushroom.
NB. We have added some notes [in square brackets].
Ingredients
- 275 g oyster mushrooms [we recommend blue oyster mushrooms , king oyster oyster mushrooms , or frayed lion's mane for a "chicken nugget" look. Elm oyster mushrooms may be too delicate for frying.]
- vegetable oil for frying
Wet breading
- 1 cup spelt flour
- 1 teaspoon onion powder [or minced shallot]
- 1 garlic powder [or minced garlic]
- 1 teaspoon salt
- 1 cup soy milk [or other milk of your choice]
- 1 tablespoon maple syrup
Dry breading
- 1 cup spelt flour
- 1 teaspoon paprika
- 1/4 teaspoon sage [dried or freeze-dried]
- 1/4 teaspoon cayenne pepper
- Pepper, to taste
Thousand Island Sauce
- 1/2 cup vegan [or traditional] mayonnaise
- 1/4 cup chili sauce or ketchup
- 2 tbsp. sweet relish
- 1 teaspoon maple syrup
- Salt and pepper, to taste
Directions
- In a deep fryer or in a pot on the stove, preheat the oil to 350˚F.
- In a bowl, mix the ingredients for the wet breading.
- In another bowl, mix the dry breading ingredients.
- Dip a mushroom in the wet breading, then coat it well with dry breading and place it in the hot oil.
- Fry the mushrooms for 3 to 4 minutes before placing them on absorbent paper.
- Repeat the operation until there are no more mushrooms left.
- Mix all the ingredients for the Thousand Island sauce and serve as a dip.
