Blackcurrant, chocolate and sweet clover muffins

Blackcurrant is a small fruit that we don't talk about much in Québec. However, it is a very interesting emerging culture. Ingredients
- 2 cups of flour
- 1 tablespoon of “Magic” baking powder
- 1 teaspoon baking soda
- 1 teaspoon of sweet clover powder
- 2 eggs, beaten
- 1 cup of sugar
- 1/4 cup butter, melted
- 1 cup of milk
- 1 cup frozen blackcurrants (or frozen haskap berries )
- 1/2 cup semi-sweet chocolate chips
Directions
- Preheat the oven to 425 F.
- In a large bowl, combine the flour, baking powder, baking soda and powdered sweet clover. Reserve.
- In a medium bowl, mix the beaten eggs and sugar using a whisk.
- Add the melted butter and milk, then mix.
- Pour the egg, butter and milk mixture over the dry ingredients.
- Mix until smooth, then stop. At this stage, avoid mixing too much.
- Add the frozen blackcurrants and chocolate chips, then fold the dough gently to distribute them.
- Pour into muffin molds.
- Bake for 5 minutes, then lower the oven temperature to 375 F.
- Cook for 15 minutes. Test for doneness by pricking the muffins with a toothpick or metal skewer: the toothpick or skewer should come out clean when the muffins are cooked.
