Full Pin, an urban mushroom farm

Full Pin is an urban mushroom farm established in 2020 in Hochelaga-Maisonneuve. It is dedicated to the cultivation of several varieties of specialty mushrooms intended mainly for the restaurant industry.

Daniel and Vathana, co-owners of Full Pin and mushroom enthusiasts, grow several varieties of oyster mushrooms. Blue oyster mushrooms ,elm oyster mushrooms , king eryngii oyster mushrooms , golden oyster mushrooms, and Italian phoenix oyster mushrooms are part of their offering. There are also other varieties, such as lion's mane and pioppino.

The two entrepreneurs met while playing ultimate frisbee. They quickly discovered their common interest in mushrooms and their integration into food. While Daniel was primarily interested in the technical aspect of mushroom cultivation, Vathana wanted to explore the gastronomic side and the world of catering. Their complementarity gave birth to Full Pin.

Daniel and Vathana's urban agriculture project has already won over many restaurants. The general public can also enjoy their tasty mushrooms through our store.

 

Myciculture in the city

How do you grow mushrooms in the city? The process begins with the substrate, the material in which the mushrooms will grow. It is composed of hardwood pellets and wheat bran. First, we must bag the substrate and sterilize it, an operation carried out using a sterilizer that Daniel and Vathana built themselves.

Subsequently, the substrate bags are seeded with mycelium and placed in a temperate and dry incubation chamber. Eventually, when the mycelium has successfully colonized the substrate, it can be observed with the naked eye: white organic matter covers it. This is when the bags are opened and placed in a cool, humid room, where the mushrooms grow. The little mushroom shoots are called "pins", hence the name "Full Pin"! Finally, the mushrooms are harvested when they reach maturity.
