What could be more emblematic of our forests than balsam fir? Nothing, we believe. Its scent reminds us of cottage vacations, the majestic wilderness, the freedom of the great outdoors and family Christmas gatherings (yes, that's the same tree you're decorating!). We are all very much familiar with its aroma, but for many of us, its taste remains to be discovered, and that's what these spring-harvested tips allow us to do. They are ideal for flavoring a dish with sauce (they will then have to be removed), or even for sprinkling on top, when in powdered form.

They have a resinous, slightly minty taste, resolutely reminiscent of the boreal forest.

Balsam fir needles can be used as a flavoring with a piece of lamb, in jelly, or in a marinade to accompany meats, especially game. They go wonderfully with smoked salmon and cheeses and can be used to flavor butter. Bonus: they can also be enjoyed as an infusion with a little honey when you start feeling like a sore throat is coming on. Depending on how you use them, you can add them whole to a cooking liquid (or infusion), slice them finely, or grind them with a mortar and pestle (avoid a spice grinder, which can be damaged by the resin).

Flavor Pairings

Balsam fir goes perfectly with everything lemony and tangy, but also with meats and fish such as lamb, game, or salmon. It is also delicious with goat cheese and honey.
